Friday Recipe: Black Bean Quesadilla

If you are anything like me you are well familiar with the feeling of being hangry. If I don’t eat regularly trough out the day I become very unpleasant to be around. So for everyones safety I’ve gathered a whole arsenal of recipes that is so easy to make even at those critical moments of hangriness. This recipe is one I keep up my sleeve for exactly those moments and also happens to be one of my favourite things to whip up for a quick lunch at home. It’s easy to make, it has cheese in it and it tastes amazing. 

You will need;

2 tortillas (this will make one finished quesadilla) 

1/2 cup black beans

1/2 cup sweet pepper (chopped in small pieces)

1/2 cup grated cheese of your liking 

a splash of hot sauce

 

I’m gonna go ahed and assume that you all know the basics of cooking up a quesadilla but just in case, here’s what you do. Start by heating up a frying pan (I use the tiniest amount of coconut oil in my pan but this really isn't necessary) and put one of the tortillas at the bottom. Layer all the ingredients on top and finish of with the other tortilla. Now, you want to make sure you put the cheese closest to the bread on both sides. Otherwise you’ll just be left with hot beans and Sriracha all over your kitchen when trying to flip it over. Cook your quesadilla at medium heat for about 5 minutes or until the bread is golden and the cheese has melted. Gently flip it over and do the same thing on that side.

If you’re feeling fancy you can serve it up with some guacamole, salsa or sour cream but I like to just add some chopped up veggies. And there you go! A super quick Mexican feast for one.
